Recipe: Wok-Fried Seafood Noodles
Ingredients:
300 g Chinese noodles
200 g mixed seafood
200 g perch fillet
2 carrots
1 red onion
2 garlic cloves
40 g dried black mushrooms
2 tablespoons soy sauce
A few drops of fish sauce (nuoc-mam)
1 teaspoon chili paste
4 tablespoons sesame oil
Preparation:
Bring 2 liters of unsalted water to a boil. Meanwhile, rehydrate the mushrooms in a bowl of water. Roughly slice the onion, finely chop the garlic, and thinly slice the carrots.
Cut the perch into cubes. Once the mushrooms are rehydrated (about 5–10 minutes), chop them finely.
Heat a wok or pan over high heat with 2 tablespoons of oil. When hot, add the garlic, onion, carrots, and mushrooms.
Stir-fry over high heat for 5 minutes, stirring constantly to avoid burning. Add a splash of water occasionally to cool the wok.
Still over high heat, add the seafood, perch, chili paste, soy sauce, and fish sauce. Keep stirring — the goal is to sear the fish quickly while keeping it slightly raw inside. Once done, remove from heat and transfer to another dish to stop cooking.
Cook the noodles in the boiling water for 3–5 minutes (or as indicated on the package). Drain.
Heat 2 tablespoons of oil in a pan, stir-fry the noodles for a few minutes, then serve them in bowls topped with the seafood mixture.
