Recipe: Rabbit in Red Wine Sauce


Ingredients:

  • 1 rabbit

  • 1 onion or 2–3 shallots

  • ½ bottle of red wine

  • Salt, pepper

  • Thyme, bay leaf, herbes de Provence

  • 1 knob of butter

  • 1 tablespoon sunflower oil

  • 3 heaping tablespoons flour


Preparation:

  1. Cut the rabbit at the joints and trim off excess fat.

  2. In a cast-iron pot, melt the butter, add the sunflower oil, and brown the rabbit pieces in batches. Grill them well — the more they’re seared, the better the flavor. Set the pieces aside (except for the kidneys, heart, and liver).

  3. In the same pot, brown the shallots or onion in the remaining fat. If there isn’t enough, add another knob of butter.

  4. Just like making a béchamel, add the flour and stir to form a paste. Gradually pour in the red wine (and a bit of water if needed) while stirring. Season with salt, pepper, thyme, and bay leaf. Let the sauce thicken — there should be enough to coat all the rabbit pieces.

  5. Return the browned rabbit to the pot, cover with the sauce, and simmer gently for about 1 hour.
